Start your day with this easy apple and cinnamon bircher style muesli that’s free from gluten, grains, sugar and dairy. Instead of oats it’s loaded with healthy nuts and seeds with grated apple and homemade coconut yogurt to make it gut-loving, hearty and flavourful. (Find all of our coconut yogurt recipes here)
An overnight soak makes the mix tender and chewy - just like traditional oatmeal, and best of all the chia seeds and coconut yogurt create a porridge-like consistency that is creamy and filling.
It’s a quick and simple breakfast that you can prepare ahead of time. For best results, whip it up the night before, leave it in the fridge and then breakfast is ready to go when you are.
The recipe makes two serving but you can easily multiply the ingredients and make a larger batch, so you have breakfasts sorted for days. You can also jar up the bircher for healthy breakfasts on the go.
Serves 2
1 organic green apple, grated
2 tablespoons chia seeds
2 tablespoons walnuts or pecans, chopped
2 tablespoons almonds, flaked or chopped
2 tablespoons pepitas
2 tablespoons shredded coconut
½ teaspoon of cinnamon
½ cup of homemade coconut yogurt + extra to serve
½ cup coconut milk or almond milk (watch how to make homemade almond milk here)
1 teaspoon of vanilla
1 teaspoon of honey or maple syrup
1. Combine all ingredients in a bowl
2. Cover and place in the fridge for 1-2 hours or overnight for best results
3. The next morning, spoon the mixture into two serving bowls and top with the extra yogurt and toppings of your choice. Goes fabulous with berries!
