A GUT LOVING CHOCOLATE TREAT

Our chocolate and berry mousse are a healthy twist on an old favourite. For these, we’re using gut loving homemade yogurt instead of cream, raw honey (or maple) to sweeten them up and chia seeds to create that same thick and creamy mousse texture. Don’t let the healthy ingredients fool you. These chocolate and berry syrup chia mousse might sound less decadent but they’re pretty much still like chocolate heaven in a glass. In fact, they’re so good for you - you can perfectly consider pulling one from the fridge, any time of the day – even at breakfast.

And, they also taste great made dairy-free with homemade coconut yogurt. We’ve given you ingredient options, so you can safely customize the recipe to suit your dietary preferences.

    chocolate and berry chia mousse

    INGREDIENTS

    Makes 4

    CHOCOLATE BERRY SYRUP
    1 tablespoon boiling water
    1 tablespoons of honey, maple syrup or coconut sugar
    1 tablespoon of cacao powder
    1 teaspoon of vanilla
    ¼ cup raspberries or mixed berries

    CHOCOLATE YOGURT CHIA MOUSSE
    1 cup of homemade yogurt (dairy or coconut)
    2 tablespoons of chia seeds
    ¼ cup raw cacao powder
    ¼ cup of milk or milk alternative
    2 tablespoons raw honey or maple syrup
    1 teaspoon of vanilla
    Pinch of salt

    VANILLA CHIA PUDDING
    ¼ cup of chia seeds
    1 teaspoon of vanilla
    1 tablespoons of raw honey or maple syrup
    ½ cup of homemade yogurt (dairy or coconut)
    ½ cup of milk or milk alternative of your choice
    Dark chocolate shavings to decorate

    METHOD

    CHOCOLATE BERRY SYRUP
    1.   Place the berries in a bowl and mash with a fork or the back of a spoon.
    2.   Add all the other ingredients and stir until smooth and syrupy.
    3.   Spoon into serving glasses or jars and set aside.

    CHOCOLATE YOGURT CHIA MOUSSE
    4.   Add all ingredients to a high-speed blender and blitz until the chia seeds are ground and the mixture is a smooth mousse-like consistency.
    5.   Sweeten further to taste if required.
    6.   Spoon on top of the chocolate berry syrup and refrigerate.

    VANILLA CHIA PUDDING
    7.   Add all ingredients to a mixing bowl and whisk vigorously to combine.
    8.   Set aside for 30 minutes to thicken.
    9.   Spoon on top of the mousse layer.
    10.  Cover and let rest in the fridge for 2-3 hours to achieve a pudding-like consistency.
    11.  Best eaten within 24 hours however puddings will stay fresh, covered, for up to 3 days.
