Do you want cake but hate dragging out the stand mixer? Not to mention the technicalities of creaming sugar into butter, and slowly adding one egg at a time etc. Wouldn’t it be brilliant if one appliance could do almost everything in the kitchen! We’ve always said the Vibe Blender is for more than just smoothies. With this vanilla cake you can say goodbye to complicated baking methods and discover the more sensitive side to your high-speed blender.

The brain behind this best blender vanilla cake is Nagi Maehashi. She’s the self-taught cook and creator of RecipeTin Eats, Australia’s most popular recipe blog. Nagi’s vanilla cake has gained the LUV of over 350k people with thousands of raving comments, so we just had to try a blender version.

The Nagi original uses the unique Japanese sponge cake method which skips butter creaming and finicky egg additions, for whipping eggs and sugar together, then adding warm milk. The resulting batter is thin and pourable and ideal for the blender. We’re so pleased with the result. INGREDIENTS

2 cups plain flour / all purpose
2 ½ teaspoons baking powder
¼ teaspoon salt
1 cup milk
½ cup (115 grams) unsalted butter
3 teaspoons vanilla extract
3 teaspoons vegetable or canola oil
4 eggs (at room temperature)
1 ½ cups caster sugar

METHOD

1.   Preheat oven to 180°C/350°F
2.   Grease 2 x 20cm / 8” cake pans with butter, then line with baking paper. The batter is thin so do not use springform pans.
3.   Combine the flour, baking powder and salt in a large bowl then set aside.
4.   Place butter and milk in a heatproof jug (or small saucepan) and heat together until the butter has melted.

5.   Add the vanilla and oil to the milk and set aside.
6.   Add the eggs and sugar into the Vibe Blender jug. Choose ‘smoothie’ mode and toggle to speed 2 and blend for 1 minute. Increase to speed 4 and blend for another 60 seconds.
7.   Open the blender lid and remove the filler cap.
8.   Add the dry ingredients into the jug. Replace the lid.
9.  Blend on ‘smoothie’ mode at speed 2 while slowly pouring the warm butter and milk mixture into the jug. Continue blending at a low speed for approx. 30 seconds or until a smooth pourable batter. It’s best not to over blend. Scrape down the sides of the jug with a spatula if necessary.

10.  Pour the batter into pans. It won’t appear much batter, but the cake has a good rise. Tap each cake pan on the counter a few times to knock out the air bubbles. Don’t worry it won’t stop the cake from rising. If you don’t do this, you may end up with large air pockets in the cake.
11.  Bake for 30 minutes or until golden and toothpick inserted into the centre comes out clean.
12.  Frost with blender buttercream.
