Mediterranean herb probiotic salad dressing

Better than anything you can get in a bottle. 

If you've been on a quest to find the perfect summer salad dressing, then look no further. Here is a dressing that is simple to make, and much healthier than anything you could buy.

Store-bought salad dressing is a common hiding place for not-so-healthy fats and flavourings. It takes little effort to make it at home though and it comes together with a few common pantry ingredients and fresh herbs. You’ll taste and feel the difference.

With the added benefit of homemade yogurt, you’ll get gut-loving probiotics dousing your salad leaves. The healthy fat and fresh healing herbs will leave you more satisfied than anything you can buy pre-made. It's SCD and GAPS friendly and can even be made vegan using any of our dairy free yogurt recipes. Mediterranean herb probiotic salad dressing

Homemade Mediterranean salad dressing can be tailored to your personal taste. From the base combination of ingredients, you can create an infinite variety of flavours to complement endless summer salads. Mix it up by simply choosing a different combination of herbs, extra garlic or including one of the suggested add-ins each time you make it.

This is a great recipe to use up whey or coconut water left over from homemade yogurt. For a smooth and creamier finish to your dressing, blend all the ingredients in the Vibe blender System for 10 seconds.

Mediterranean herb probiotic salad dressing

Makes approx. 700ml

INGREDIENTS

1 cup homemade yogurt
½ cup of whey or coconut water from homemade yogurt (or filtered water)
2 garlic cloves crushed (if you are a garlic lover – add more)
3 tablespoons of extra virgin olive oil – add more if you like
1 teaspoon of salt
4 tablespoons of freshly chopped herbs of your choice - parsley, basil, thyme, oregano, sage, dill
Juice half a lemon
2-3 teaspoons raw honey or maple syrup
2 teaspoons mustard (additive free)
Freshly ground black pepper to taste
Additional whey or filtered water for thinner dressing

Optional
¼ - ½ cup of grated parmesan cheese
Zest of an orange or lemon
1 tablespoon of cultured cream, for a thicker and richer dressing

METHODS

1.   Add all the ingredients to a glass jar, seal the lid and shake well to thoroughly combine.
2.   Leave sealed and store in the fridge for up to 2 weeks.
3.   Shake well before pouring over salads.
